It’s been another year since you have been gone. But I have never stopped thinking about you. They say that time heals, but I don’t feel any better as each day passes, the pain is still so vivid, it feels like yesterday that I lost you. I’ve once promised you that I will make you a cake every year. I hope you liked the Angel Chocolate Cake I made for you last year. I have always called you my angel. Yet you always asked me why because you were always giving me a hard time and doing things and saying things that breaks my heart. You said you should be my demon instead, but you know no matter what, you are not my demon because, we can’t always have smooth sailing all the time and the hurt and pain you gave me didn’t break me but made me stronger and into a better person. How can it be that you are not my angel then?

I hope you will be pleased that this year my baking skill has improved… I think. You know that I have always take note of what you like and what you dislike. I have been keeping a list of things that you like to eat and things that you don’t like to eat since the day we started. I still carry it with me even to this day in my PDA. Even though the list will never be updated anymore, but I still read it once a while. You have always like the Chocolate Fudge Brownies from Secret Recipe but you just dislike the sweetness and the “stinginess” of almond in them. I remember once we had those brownies and some apple pie, and you said that these two goes perfectly together. So I have come up with a recipe that combines the Chocolate Fudge Brownies with the filling of an apple pie










Almond was one of your favorites, so after one too many series of Martha Stewart, I wanted to do a decoration that would look good and taste good. I made myself a pot of caramel, stuck an almond on a stick then dip the almond into the pot of caramel. Letting it drip and creating something like a caramel coated almond cherry when it cools down.

The mixture: Butter, roughly chopped dark chocolates, chopped almonds, self raising flour, coco powder, eggs, skimmed milk, sugar (reduced because you prefer less sweetness), and apple pie filling (shredded apple cook with sugar and cinnamon). You never like raisin that is why I didn’t put in any. If you did, I would have soaked the raisin in XO for a couple of days before mixing it together :P.

My timing was always out but today, I guess My Angel was looking out for me after all. 20 minutes at 180 degrees in the oven and the mixture came out looking like this and it was perfectly cooked.

I cut it into the size of 2" x 2" and then spread the chocolate icing on top. The icing is made out of coco powder, a little butter, icing sugar and a little bit of hot water. I sandwich the brownies and then spread more icing on top.

The caramel coated almond goes on top of the brownies and that you have it. You very own custom made brownie to suit to your taste. I shall name it after you ... Angel’s Brownies.

Angel’s Brownies

125gm Butter
1 ½ Cup Self Raising Flour
½ Cup Castor Sugar
2 Eggs
1 Cup chopped almond
½ Cup roughly chopped dark chocolate
½ Cup Skimmed Milk
½ Cup Coco powder
1 Cup Apple pie filling


Apple Pie Filling

2 Apples (cored and shredded)
½ Cup castor sugar
2 teaspoon Cinnamon powder

Chocolate Icing

1 Cup Icing sugar
¼ Cup coco powder
1 TBSP butter
1 TSP warm water
